Kang-kong spinach harvest November 28th 2023

Kang-kong is a variety of spinach which has grown very vigorously in our nursery. We planted it soon after I arrived six weeks ago and harvested our first spinach today.

There is still plenty more to harvest as it continues to grow vigorously.

We took it to the same Chinese vegetarian restaurant where we took the amaranth yesterday. Once again Mrs Kong seemed very pleased with it and said she would use it in tomorrow's lunch.

Then we enjoyed today's lunch which included the dish made with the amaranth we brought Mrs Kong yesterday.

We have been talking about how when I come back in a few months time we will focus on growing spinach like kang-kong and amaranth. Then we will have something to sell within six or eight weeks of when I arrive here.
